Kitchen Stories with Amalie Reedtz-Thott

The kitchen is more than just a place to cook—it’s a space for rituals, nourishment, and small moments of self-care. In this edition of Kitchen Stories, we step into the world of Amalie Reedtz Thott, where functional mushrooms, matcha, and collagen take center stage in her wellness routine.

From morning elixirs to pantry must-haves, she shares how she fuels her body and mind. Plus, we’ve included an adaptogenic matcha recipe to bring a little extra balance and clarity to your day.

What’s the first thing you reach for in your kitchen each morning?

My glass of lemon water—it’s such a simple, grounding ritual that helps me start the day feeling hydrated. Right after that, I make my black tea with oat milk, which awakens me. It's my little morning ritual before the day begins.

What will you always have in stock in your pantry?

Almond butter, goji berries, oat milk, and black tea. These are my go-to staples. Almond butter is just good on top of anything and my kids love it, goji berries so nourishing and a sweet snack and oat milk and tea because they’re part of my daily rhythm.

How do you incorporate functional foods (like mushrooms, matcha, or collagen) into your routine?

I love adding them  into my existing habits. I often add functional blends or powders to my matcha or simply stir them into my water bottle throughout the day. It feels effortless but its a small powerful act of self-care that supports my body and energy throughout the day.

Do you follow any specific rituals around meals or drinks that help you feel your best?

I never eat anything before having my glass of lemon water in the morning—that’s my only non-negotiable. It’s such a small thing, but it really helps my digestion and energy. Otherwise, I don’t follow any strict rules. I listen to my body. I love hearty stews and soups—they make me feel nourished.

What’s one thing you will always serve at a dinner party?

Chips and dip, olives, and always some ginger kombucha.

Is there a family recipe or tradition that you love to make?

Our family salad dressing! It's passed down from my mom and grandma. It’s simple; mustard, vinegar, olive oil, salt, and lemon. I love carrying on that little tradition.

What’s your guilty pleasure snack or drink?

Chips. I love chips.
